Anyone who knows me well will know that I am a right cookie monster so when I fancied doing some baking last weekend I of course plumped for a cookie recipe! I tried to go for an ever so slightly healthier variation than the classic chocolate chip so decided to give oat and raisin cookies a go! I basically followed this recipe from Amy’s Healthy Baking blog but swapped out a couple of the ingredients because I wasn’t feeling quite that healthy!
90g wholemeal flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/8 tsp salt
2 tbsp margarine
1 tsp vanilla extract
I began by whisking together the oats, flour, baking powder, cinnamon and salt. Then, in a separate bowl I whisked together the butter, egg and vanilla. I then combined the two and stirred together folding in the raisins also. This was then chilled for thirty minutes before popping onto a baking tray,
The cookies were then baked for around fourteen minutes at 160C.
After baking the cookies were left to cool for ten minutes.
And this was the end result! Super tasty chewy cookies which went perfectly with a cup of tea. It’s just a real shame that they’re now long gone, I may have to get making another batch!
